Fare Report: Mrs. Barbara’s Freezer Pickles

I love sharing recipes with readers, and I love when others share recipes with me. During a recent trip to my hometown, my sister's dear friend and neighbor, Linda Winkle, shared a handful of recipes with me. Thank you, Linda!

Pumpkin and peanut butter dog treats are irresistible.

Linda is such a caring friend and neighbor to my sister. She never misses a birthday or celebration; and even packs goodie bags for us when we go on vacation. I had a lovely time catching up with her, and I couldn't wait to try out one of her recipes.

When I returned home, I decided on Mrs. Barbara's Freezer Pickles as the first recipe to make. Mrs. Barbara was a dear neighbor of Linda's in Detroit. Neighbors sharing with neighbors — how wonderful.

Mrs. Barbara's recipe is easy to follow, and the result is delicious. If you enjoy pickles or find yourself with an abundant crop of cucumbers, then this recipe is for you. I hope you give it a try or share the recipe with a neighbor.

Mrs. Barbara's

Freezer Pickles

7 cups sliced cucumbers

1 cup sliced onion

1 cup sliced green peppers

2 tablespoons salt

1 cup apple cider vinegar

2 cups sugar

1 tablespoon celery seed

Begin this recipe by slicing cucumbers in the traditional pickle spear shape. Slice the onion and green pepper. Lay the cucumbers, onion, and green peppers flat in a baking dish. Sprinkle the salt evenly over the cucumbers, onion, and green peppers.

Now, let them sit for about 2 hours. The salt will pull out the excess liquid, giving more of a crunchy pickle for the result. Drain the liquid and gently pat dry the cucumbers, onion, and green peppers.

Place the pickles in a freezer-safe container. Next, mix the vinegar, sugar, and celery seed. Stir and pour the liquid mixture over the pickles, onion, and green peppers. Place the container in the freezer or enjoy after about 2 hours of marinating.
